Using Tourer on the website, I am frustrated with Kurviger always deciding where it wants me to go. Can Curvature be disabled to allow specific shaping and via points with just mouse clicks? Also, it seems very difficult to impossible to remove portions of a route chosen by the Curvature setting.

Isn’t “letting Kurviger plan a route” the whole point of using a motorcycle route planner? If the suggested route between two waypoints is too twisty for your taste, you can always choose another option (even “fastest”) under the curvature settings.
That said, if you set shaping points or via points, Kurviger will follow those precisely without a problem. And if you’d like it especially simple, you can enable “Place a new waypoint with a left click on the map” in the settings.
Maybe I’m not yet fully understanding your issue?

Setting the Curvature to Fastest is allowing the most options and control for what I want to do. Thank you.
