I like the Kurviger Curve settings but I’d like to be able to change the setting for each section. Maybe from Vancouver to Seattle I want to ride interstate highway but from seattle to San Francisco I want to ride twisties.

No, avoidance rules can only be applied globally.
Use avoidance rules sparingly.
No, you can not set avoidances per section as we think that it would make routing and usability too complicated.
However, we advice not to overuse avoidances anyways, as Kurviger automatically plans motorcycle friendly routes, thereby avoiding roads that are less fun to ride. Thus, avoidances are optional and excessive use can even hinder useful route calculation.
